Beet Farro Salad

Name: Beet Farro Salad
Ingredients: 1 cup dry farro (soaked overnight); 2 cups water; ½ teaspoon sea salt; 1 cinnamon stick; 6-8 beets (~4 cups chopped; no need to remove the skins); 4 celery stalks (chopped); 3 garlic cloves (minced); 2 teaspoons cumin seeds (lightly crushed); 1 tablespoon coconut oil; Zest and juice of 1 lime; 1 tablespoon raw honey; 1 tablespoon olive oil; ½ teaspoon ground black pepper; ¼ teaspoon ground nutmeg; ½ cup finely chopped fresh mint leaves; ⅓ cup toasted nuts (optional; I used toasted almond pulp, but chopped pistachios, walnuts, or slivered almonds would also be tasty!)
